If you do this kind of thing a lot, and especially if you go from DVD to iPod on a regular basis, Handbrake http://handbrake.fr/ is worth checking out. I use it primarily to slurp the contents of DVDs into iTunes. We have DVD sets for a number of television series and it is much easier to sort through them, find the episodes you want, add descriptions you can search, and watch a show or too without shuffling disks. I have a disability and tend to get stuck on the couch for significant periods of time. It is nice to be able to use Front-Row and the remote to flip through movies and audio books so I don't go out of my mind with boredom or have to ask my wife for help as much during those periods. I can set a DVD in the drive and one in my external burner, queue the episodes up and let HandBrake work through them overnight. You can change HandBrake's process priority from Activity Monitor (or renice from the command line) to let it behave better in the background while doing other stuff (adjust the priority BEFORE you start any conversions).

But I also use it every so often to batch convert videos already in digital format. I got the videos for a lecture series on wind energy systems from a retired professor recently (I used his textbook in college) and used Handbrake to convert them to a podcast format. Now I can watch the lectures on my iPod or potentially, set them up as a podcast from our website for others to watch. Handbrake made that pretty easy. I just added them to the batch queue and let it take several days to work through them all. I converted some DVDs during that time as well without any complex juggling. Just add them to the queue, move things around in the queue if you want, and it will work through them one by one.

Handbrake will handle most common input formats and has a dizzying array of output options. It comes with common presets such as "iPod" and "Apple Universal" that are easy to use and seldom have to be modified. I find that, for instance, I have to change settings for animated movies that pixelize too much and that is about it.

Handbrake seems to make very good use of both processors/cores and available I/O. I don't know how well it will do on more than four cores, however. It does need PLENTY of RAM. When we only had 128 MB, it was very slow. Adding even another 128 MB makes a big difference, and a GB or two means it can run smoothly while doing other things.
